Tanaka Sake Brewing—Kikkogura Warehouses

This brewery has the technology to brew sake all year round

Built around 1905, these stone warehouses are designated as Historic Buildings of Otaru City. Unlike most breweries in Japan, Tanaka Sake Brewing is able to brew sake all year round, and these warehouses are the reason why. They’re the only sake brewing facilities in Hokkaido that are not dependent on the season, allowing you to enjoy freshly brewed sake even in summer.
The water for the sake is drawn from a water source about 70m underground, formed by years of melting snow from Mt. Tengu. The abundant nature surrounding Otaru is the secret to the high quality of this brewery’s sake.

This sake is one you'll fall in love with again and again—you'll notice new beauty each time you drink it.

That's because the moment it hits your tongue, there's this bold taste. It's sharp and fresh. Even when it's a little warmer, there's this crispness that always comes through.
I recommend drinking it chilled or at room temperature. You get the full taste of the rice that way.
This sake goes well with blue-skinned fish like Pacific saury or mackerel. It's great with shiokara (fermented seafood) and other foods with unusual flavors.
