Unique drinks with local ingredients from Hokkaido’s first gin distillery
Hokkaido’s first gin distillery, Benizakura Distillery was opened in 2018.
The company name, Liberty Whiskey, is a call for those drinking the gin to dream of a future where people drink together happily in a free world with free thinking and values. The botanicals include plants picked in Benizakura Park near the distillery, along with kelp (kombu) from the Hidaka area and local mushrooms, for a quintessentially Hokkaido range of craft gins.

Admiring the cherry blossoms adds to the experience of this gin
With one sip, your mouth is filled with a taste that evokes the scents of a Hokkaido forest.
The crisp, sharp taste leaves an umami aftertaste on the tongue. I love how dry and punchy this gin is.
Apparently it's made with Hidaka kelp, dried mushrooms and thinly sliced and dried daikon radish, and the result is a craft gin that is dry but has a sweetness to it as well. That's something I like to see.
This season, I want to enjoy it on the rocks with Rakuyo mushrooms pickled in soy sauce, or with soda for a Chinese meal such as Qingdao stir fry.
