Located at the foot of Mt. Hakkenzan, an area with a unique microclimate and topography, this winery opened in 2011 after three years of viticulture research.
To this day, this winery selects the optimal grape species and test grows them in its own vineyard. The lovingly tended grapes are then combined with local fruits such as apples to create wines that stand apart from the rest and put Sapporo’s wine industry on the map. Hakkenzan Winery also makes processed products such as jams and juices from locally grown fruits and sells them at Hakkenzan Kitchen & Marche in the grounds of the winery.

Kanonz Sparkling Niagara Brut
Flamboyant but not sweet...this one expresses who I am!
When you smell this wine, the grapes make themselves known.
It's flamboyant but very dry—it's not sweet at all.
There's an aftertaste but there's no heaviness!
Drink this one as cold as you can get it.
When I'm drinking at home, I tend to start with beer, but a fresh, fizzy, refreshing sparkling wine like this might change my mind!
With food, it adds a welcome dryness, so don't confine it to Western dishes. It goes great with fried or deep-fried things—anything you'd enjoy with beer.
Speaking of which, I have a secret recipe for deep frying—deep fry it once, then microwave it and then deep fry it again.

When I saw that this was a Niagara wine, I assumed that it would be sweet, but while it still has that fruity, floral side, it combines that with dryness in a way that makes me want to applaud.
It's less of a date wine and more something I'd drink with the girls!
