Chitosetsuru Sake Museum
A community-oriented brewery that takes you back to the beginning
This building by the Sosei River originally housed Shibata Sake Shop. Opened in 1872, the brewery was one of the pioneers of Hokkaido’s sake industry.
It’s now Sapporo’s only brewery, and actively uses local ingredients. The water is drawn from the bed of the Toyohira River and the specialist sake rice is grown right here in Hokkaido. “Local production for local consumption” is the motto in every process, and this community-oriented brewery is beloved by each new generation.

Like the moment when attraction turns to love.
When you take a sip of this sake, you have the beautiful aroma of rice and this elegant sweetness. It gives me the image of a gentle but classy lady.
The closer this sake is to room temperature, the more the sweetness comes through, so you want to chill it and put it in a narrow daiginjo glass, like a Riedel, and let it warm to room temperature as you savor it.
This goes best with things like tonteki—high-quality fatty pork steaks seasoned with salt and pepper.
