Opened in Kutchan in 1916, Niseko Shuzo Ltd. has four things that it won’t compromise on—unprocessed sake, pure water, fresh air and the environment.
This brewery was reportedly the first in Hokkaido to sell sake that is not adjusted with water.
The water used in its brewing process comes from pure melted snow from the mountains around the Niseko Weiss resort and fresh spring water from Mt. Yotei.
The brewery is located in an area so snowy that the building is buried under a mound of snow in winter—perfect for the fermentation process, which requires low temperatures. Niseko Shuzo is a company that never shies away from a challenge. They make the most of everything that makes them unique in a variety of initiatives, including a commitment to using Hokkaido-grown rice that they have maintained for over 20 years.

Niseko Junmai Ginjo Red Label
I feel so comfortable that I could stay here forever.
This sake! It has a smooth mouthfeel and the flavor of the rice just stays on your tongue.
This one is best slightly below room temperature, my favorite way of drinking sake.
It's made with Suisei, a specialist sake rice from Hokkaido, and the brewers meticulously carry out a traditional hand-brewing method to give us this junmai ginjo sake.
It's got a bold aroma and an umami taste with just the right touch of sourness.
I'm going to have another glass with some umami food, like amberjack sashimi or namero (a dish similar to tartare).
