Opened in 1899, Tanaka Sake Brewing is Otaru’s only sake brewery.
The brewery makes only junmai (pure rice) sake, and all of the rice used is grown locally in Hokkaido.
The concept of tema-hima , cycles of meticulous work and plenty of time for fermentation, is central in the company’s brewing process, and every last detail is taken care of. With small production volumes, sales are mainly direct to consumers—the majority of stock is sold in the brewery’s own store and other stores in Otaru. Through collaborations with farmers and communities around Hokkaido, Tanaka Sake Brewing creates special regional products made with rice from those regions, among other projects to raise the profile of local communities.
